Kala Namak, also known as black salt, is, like normal table salt, mainly made of sodium chloride. However, it has a very special sulfur aroma, which is reminiscent of boiled eggs and is therefore ideal for vegan cuisine to get an egg flavor on the dishes. The black color actually comes through the reduction with charcoal, but in the end the color is rather reddish, due to its high iron content.

Only add towards the end, as the sulfur aromas are volatile.
Mayonnaise, aioli or sauce Hollandaise refined with Kala Namak, gives it a wonderfully typical taste. But it also fits wonderfully on avocado breads or chutneys and curries.
