Cinnamon as a spice is the bark of an evergreen tree, which is tightly rolled up and dried. In Europe, cinnamon is mainly used for desserts, whereas Asian and Oriental cuisine uses it exclusively for savoury dishes. Cinnamon has the property to enhance the sweetness of other ingredients. In general, a distinction is made between two types of cinnamon, the real Ceylon cinnamon and the more common Cassia cinnamon, which has a slightly more robust aroma and is sweeter, but should therefore also be dosed more carefully.
