Vietnam is the largest pepper producer in the world, but this pepper is really special. Our red Phu Quoc pepper comes from the Vietnamese island of the same name and its production is pure handicraft from start to finish. Thus, the Phu Quoc pepper and among all the peppers in the world is a rarity and the farmers are quite proud of it. We source it from a supplier who runs his own plantation and, like us, places the highest value on quality, sustainability and the well-being of human and nature.

Usage
Grind the mortars or in a mill and do not let it simmer for too long, otherwise the aromas will evaporate. The locals in Vietnam mortar it together with salt and add some lime.

Grinding directly before use – pre-ground pepper only contributes to sharpness.

Tipp
In order to get the pepper-like aromas AND the sharpness into a dish, the whole grains should be cooked from the beginning and at the end of the cooking time, again pepper should be freshly ground in it.
