Amchur (Amchoor) (ground)
citrus-like, fruity-sour, bittersweet
May contain traces of celery, mustard and sesame seeds.
Good to know
The word is Hindi and means "mango powder", which is very fitting because amchur is obtained from unripe, dried mango fruits. It is a perfect substitute for lemon peel, but without the bitter note. It is also good for making meat tender, just mixing something into the marinade.
lamb, fish, seafood, legumes, potatoes, cauliflower, avocado
It is used to give food a certain acidity – acidity effect: 1 tbsp amchur = 3 tbsp lemon juice.
Full taste development
To emphasize the acidity and sweetness, add it to the food early, better add it just before serving for having the extra buttery notes.
Amchur is a great way to make meat tender. For this purpose, it can be used, for example, in a marinade, which gives a fruity note at the same time.
