Good to know
Asafoetida is made from the resin of a plant and is certainly a quite controversial spice, as the smell is more than habitual. Also known as "devil's dung", asafoetida smells a bit like onions, garlic and rotten eggs, changes its smell and taste when it is cooked and goes to the sweet. For the Indian brahmins it is used as a substitute for garlic or onion, as onions are considered an aphrodisiac, and therefore its consumption is not allowed.

Usage
Use whole or ground, but please be very economical. It is best to dissolve in fat or fry with it, as the taste development in water takes a long time. Please do not use with onions as the aroma will become too intense.

Soak single grain (or several grains) in water for a few hours and season with the water.
