Wild cubeb pepper (Litsea Cubeba)
strongly lemony, slightly bitter
May contain traces of celery, mustard and sesame seeds.
Good to know
Litsea cubeba, or mountain pepper, is not really a cubeb pepper. The berries are prepared and dried and yield one of the most beautiful and intense lemon scents. It is a pepper that looks like black peppercorns, is less spicy and has a strong lemony and thyme-like aroma. Our pepper is sourced from Vietnam, but it is also very well known in Taiwan, where it is mainly used by the local Aborigines – called "Maqaw".
lamb, game, fish, seafood, parsnips, kale, savoy, red cabbage
Our wild cubeb pepper has an incredibly lemony aroma and exudes a fantastic fragrance. You should use it as whole grains or crush it in the mortar. Due to the intense taste, it should be carefully dosed and combined with other spices.
Full taste development
Roast dry before crushing.
Ideal for Asian soups and stewed dishes, as well as marinades for meat and fish. A really refreshing note comes when you season your mayonnaise with it.
