You are looking for a spice that you can use as an all-rounder to give your food a new nuance and that fits everything. Then coriander seeds are your choice. Coriander is one of the oldest spices in the world and is now grown in many parts of the world. In the 18th century it was somewhat out of fashion in Europe and was mainly used for the production of beer and gin – and is still found in some Belgian beers. Coriander seeds taste completely different from the fresh coriander, which is more likely to be characterized as acidic-sharp, but essential for Asian dishes. The seeds are also often used in curry mixtures, but are also popular in baked goods and soups.
Coriander seeds can be used whole or ground; the second is better with a short cooking time, however, as a fuller aroma is then developed. In general, you can dose generously, but it is always possible to combine coriander seeds with other spices – here especially cumin. But also, the combination with herbs results in a good harmony. Coriander can even be used to compensate for "spice mishaps" by compensating the spice, which has been given too much into a dish, by the same amount of ground coriander.

Ground also suitable for thickening sauces, as the paper-like shells and the coarse, granular structure of the seeds absorb a lot of moisture. For a quick seasoning combination, mix coriander seeds under the peppercorns in the pepper mill. For sweet dishes ALWAYS use ground coriander.

Should be consumed regularly if you suffer from diabetes, rheumatism or joint pain: Coriander can lower blood sugar levels and increase insulin levels and is therefore traditionally used as a cure for diabetes, rheumatism and joint pain.
