A masala is a spice preparation from Indian cuisine and our lamb masala is specially adapted to the preparation of lamb (or goat). Lamb masala is a popular dish of simmering, which is eaten with bread or rice.
Dissolve 3 tsp lamb masala into 1/2 cup lukewarm water and then add to the sauce - alternatively add the powder first and then top up with water.

Add the mutton masala to the sauce just before the end of the cooking process to preserve the volatile aromas.
In a frying pan, heat a whole cinnamon stick, a nutmeg, an Indian bay leaf, a red chilli, black cardamom and a chopped onion. Then add the lamb masala to the sauce.
